We did it! The 2024 January through April class schedule is finally done! Madi has been scheduling, planning, orchestrating and taking in all the requests for this coming year of classes. Working around all the different instructors schedules is no small task! But we are so excited to launch the first quarter classes tomorrow December 6th at 7 am. You’ll find a lot of the classics mixed in with some new favorites-Sourdough with @charitylightenPies with @abountifulkitchen Back to the basics with @cookingwithmalia Baklava with @chefmartinearl Tempering with @conniestancie Parent/child class with @lkcooking French Macs with @mmmdessert And that’s just in the first week!!!! We cannot wait to have you in the Gygi kitchen with us in 2024! Thanks to @jennifer.garner for the idea for a little stress release as we celebrate this upcoming launch! You know all the classes we teach are full of so much info but we have a lot of fun too! Thanks Madi for making the classes a place we all want to be! We promise not scary filters in class. Haha.

When popping your mushroom kernels you might notic

When popping your mushroom kernels you might notice a few things- 1- the air popper is our favorite way of popping it. And we’ve tested a lot of different poppers to get us the hottest ones. Because of their thicker hulls you’ll notice the hotter the air popper the less half popped and larger end results. (I’ll link our fav popper in stories!) 2- if your kernels are getting a little older you may need to rehydrate the kernels. They need more moisture to work with the heat from your popper. If you notice they’re not popping like they used to- you can add a tablespoon of water with about 3 cups of kernels in a quart jar. Shake really well every ten minutes until you don’t see water pooling on the bottom. Now let it sit for two or three days while the moisture is evenly distributed into the kernels. 3- the mushroom kernels can get stuck in the neck of your popper since they pop so much larger. Give it a gentle shake as it’s popping up to keep them moving and prevent them from burning in the popper.
