What is direct and indirect cooking?

Direct cooking is when the food is placed directly on top of the heat source. Indirect is when the heat source is on either side of the food, and not directly beneath it. Use the direct method with food that takes less than 25 minutes to cook. And you’ve probably guessed it… the indirect method is used for foods that need more than 25 minutes to cook. How do I know if I should get a gas grill or a charcoal one?

First off, you should know that there have been may blind tasting tests done and most people can’t tell the difference between meat that has been cooked on a gas grill vs. a charcoal one. After you know that, the choice is yours. If you need further assistance in deciding, you can our simple (and silly) question test. It may or may not help you along the way…

I’ve heard you offer free grilling classes every year. Is this true and if so, when is it?

Yes, we do offer free grilling classes every year when we do our annual Grilling Gala. Usually we hold the gala in June. It’s full of free classes, recipes and grilling tips taught by the wonderful chefs here at Gygi’s.
