February isn’t just for love… but also for the love of chocolate. That’s why every Monday this month, we’ll be bringing you our favorite truffle recipes from Peter’s Chocolate.
Bacon Bit Truffles
What you will need:
2.5 lbs. Peter’s Ultra Milk Chocolate
1/2 lb. Heavy whipping cream
1/2 lb. Peter’s Caramel Loaf
Bacon bits (finely chopped–use as many as desired)
Scald cream and whisk in Peter’s Caramel Loaf. Let cool to 160 degrees F and whisk in pieces of Peter’s Ultra Milk Chocolate. Mix until consistent. Let cool for at least 3 hours in the refridgerator. Once cool, scoop and roll into 1 inch balls. Place on a bun pan with parchment paper. Temper Peter’s Ultra Milk Chocolate. Once tempered, add bacon bits to chocolate as desired. Coat in Peter’s Ultra Milk Chocolate (once or twice) and sprinkle more bacon bits on top of the truffles if desired. Cool and enjoy.
