Chocolate Ganache

Have you tried the magic that is chocolate ganache yet? This deliciously easy, decadently simple mixture of chocolate and cream is the base for many chocolate confections. Truffle centers, fillings for cakes, drizzles for pastries- the consistency is smooth and creamy, and the ganache has the ability to elevate your homemade desserts from simple to decadent.

Here are just a few reasons we love whipping up a batch of chocolate ganache:

  • The chocolate flavor really shines here, so use the best flavor you’ve got. No need to temper this chocolate, so your fancy couverture chocolate is perfect in this application.
  • Save your ruined chocolate and turn it into ganache! Have you ever seized your chocolate with a little bit of water? One drop of water and the whole bowl turns crumbly and chunky. Don’t throw it out, add some cream and turn that bowl of chocolate into ganache!
  • Chocolate ganache only requires two ingredients, both of which you usually have on hand: Chocolate + cream, that’s all it takes. We love something as simple as that.

We had our friend Meriel from Mmmdessert join us in the Gygi kitchen to talk about Chocolate Ganache and her favorite ways to make it and where to use it. Watch this video and you can see just how versatile ganache can be in your kitchen… The name makes it sound intimidating, but the process of making ganache can not be more simple.

Ingredients

  • For Chocolate:
  • Equal part dark or milk chocolate
  • Equal part cream
  • For White Chocolate:
  • 1/4 cup cream
  • 1 cup white chocolate chips

Instructions

In a microwave-safe plastic or silicone bowl, melt your chocolate in 30-second intervals, stirring between.

When chocolate is melted, slowly stir in cream. Stir until smooth and emulsified. You can use an immersion blender to help create an impossibly smooth ganache, but stirring by hand will do the trick!

Immediately pour into molds, drizzle over cakes, or dip pastries.
