Just know, this is a very forgiving recipe and you can find a ratio of fruits and sugar that you like best. This recipe yields about 4 cups, and if you are drowning in peaches and want to make more, don’t be shy about doubling or quadrupling this recipe.  You can easily add some applesauce or raspberry jam to this recipe too. It will extend those expensive berries, add additional fruity flavor, and make your freezer jam less seedy.

Quick Tips for Freezer Jam

Now, our best time-saving tip for this recipe is to blanch your peaches to remove the peel. We know it’s an extra step and a couple of extra dishes, but trust us, it’s worth it. Simply use a small paring knife to cut an “X” in the bottom of the peaches. Then use a wire mesh strainer and blanch about four peaches at a time in a large pot of boiling water. Only blanch for about 40 seconds (you don’t want to cook the peaches) and then move to an ice bath. Finally, let the peaches cool and then quickly remove the skins. They should slide right off. If not, give them another quick blanch and cold plunge.

What are some other tools you might want for this quick and easy freezer jam? You can use a food processor or blender to combine the fruits. However, we prefer the versatility of the immersion blender so we can clearly see the mixture and get to a consistency that is just right. For the thickening agent, we use E-Z gel because it truly is so simple and not at all intimidating. We also decided to store our jam in deli containers with lids. They proved to be the perfect size and are freezer-safe. You can do larger sizes if you know your family is going to go through a lot of jam. Or you can do smaller sizes if you want to gift some of your freezer jam to the neighbors.

Peach and Raspberry Freezer Jam

Serves: 4 cups

Ingredients

  • 2 cups ripe peaches (skinned and sliced)
  • 1 cup raspberries
  • 3-5 cups granulated sugar
  • ¼ cup lemon juice
  • ½ cup E-Z Gel

Instructions

Add all of the fruit to a large bowl or food processor.

Crush or blend until you get the smoothness you want.

Add sugar and lemon juice and mix until the sugar dissolves.

Slowly add E-Z Gel into the mixture, constantly stirring so it doesn’t clump.

Let mixture stand for about 5-10 minutes to help thicken.

Transfer mixture to desired containers, seal, and label.

Allow to sit on the counter for a couple hours to gel and then freeze.

Frozen jam can last 12-18 months.
