The secret to a great brunch is all in the muffin, especially if it’s a savory muffin. Add some herbs and a little cheese for a muffin that is simply irresistible.
What you’ll need
1 cup whole milk
2 eggs
2 tablespoons butter (melted)
1 cup flour
1/4 teaspoon salt
1/2 cup parmesan cheese (grated)
1 teaspoon rosemary (chopped finely)
1 teaspoon sage (chopped finely)
Makes a standard 12-cup muffin pan.
Preheat oven to 450 degrees Fahrenheit. Spray your muffin pan with a high-heat grease spray. In a mixing bowl, combine eggs, milk, butter, flour, and salt and whisk together until blended. Add the herbs and cheese, whisk into the mixture until it’s combined well. Scrape the batter into a large measuring cup, for easy pouring, and set aside. Place your greased muffin pan into the oven for about 5-7 minutes to preheat the pan. Once it’s heated, remove the pan, and pour the batter equally throughout the muffin pan.
Bake for 15 minutes at 450, then turn the heat down to 400 degrees. Continue baking until the tops of the savory muffins have turned golden brown and begin to puff up.
Remove from the oven and allow the muffins to cool for a few minutes before removing them from the pan. Serve warm and enjoy!
